Sinop ilinde kadınların mutfak güvenliği ve yemek pişirmeye yönelik tercihleri

Türkiye'nin en kuzeyinde yer alan Sinop, önemli kültürel değerlere sahip olan bir şehirdir. Antik çağlardan beri varlığını devam ettiren kültürel yapısıyla bölgenin önemli şehirleri arasındadır. Sinop ilinde kültür hakkında yapılan çalışmaların sayısının az olması çalışmanın Sinop ilinde yapılmasını teşvik etmiştir. Bu sebeple çalışmanın yapılmasına ihtiyaç duyulmuştur. Yapılan çalışma esnasında kentin mutfak kültürü ve özellikleri, yöresel yemeklere ait reçeteler, kadınların mutfak güvenliği bilgilerini, yemek pişirmeye yönelik tercihlerini saptamak ve kayıt altına almak amaçlanmıştır. Çalışmada öncelikle yüz yüze görüşmeler yapılarak, Sinop iline ait yemek reçeteleri sunulmuş ardından kadınların mutfak güvenliği ve yemek pişirmeye yönelik tercihleri adlı anket çalışması yapılarak elde edilen bulgular kayıt altına alınmıştır. Hipotezler test edilerek bulgulara yer verilmiştir. Çalışma sırasında Sinop mutfak kültürü bütün yönleriyle ele alınmıştır. Bu kapsamda Sinop mutfağında yer alan çorbalar, et yemekleri, ekmek ve hamur işleri, ot-sebze yemekleri ve mutfak kültürüne dair bilgilere yer verilmiştir. Çalışmanın ikinci bölümünde ise yapılan anket çalışmasında kadınların mutfak güvenliği ve yemek pişirmeye yönelik tercihleri hakkında bilgiler içermektedir. Problemi çözecek ve hipotezleri test edecek bilgileri sistematik bir şekilde toplamak amacıyla yapılan anket çalışmasının analizine yer verilmiştir. Çalışma sonuçlarını yansıtacak şekilde oluşturulan hipotezleri test etmek amacıyla T Testi ve One-Way ANOVA testleri yapılmıştır. Kadınların mutfak güvenliği ve yemek pişirmeye yönelik tercihleri adlı anket çalışmasının sonuçlarında H1 H2 H7 H8 H10 H11 hipotezlerinde anlamlı farklılıklar olduğu saptanmıştır. Çalışma sonuçlarında Sinop mutfak kültürü ve yemeklerinin özellikle genç kesim tarafından az bilindiği sonucuna ulaşılmıştır. Yöresel yiyeceklerin nesilden nesile aktarımının sağlanabilmesi için yerel yönetimler ve eğitim kurumları aracılığıyla halkın bilinçlendirilmesi sağlanmalıdır.

Sinop, a city located in the far north of Turkey, is a city with important cultural values. Its cultural structure, which has continued to exist since ancient times, is one of the important cities of the region. The number of studies on culture in Sinop province encouraged the study to be conducted in Sinop province. Therefore, the need for the study has arisen. During the study, the aim was to determine and record the kitchen culture and characteristics of the city, local recipes for dishes, information on kitchen safety for women, and their preferences for cooking. In the first part of the study, face-to-face interviews were conducted and recipes for dishes in Sinop province were presented, and then the findings obtained from the survey titled "Women's Kitchen Safety and Preferences for Cooking" were recorded. Hypotheses were tested and results were included. During the study, the Sinop kitchen culture was examined in all its aspects. In this context, soups, meat dishes, bread and dough products, vegetable dishes, and information about kitchen culture are included in the Sinop kitchen. The second part of the study includes information on the results of the survey titled "Women's Kitchen Safety and Preferences for Cooking". The T Test and One- Way ANOVA tests were performed in order to test the hypotheses formed in a way that reflects the results of the study. In the results of the survey titled "Women's Kitchen Safety and Preferences for Cooking", significant differences were found in the H1 H2 H7 H8 H10 H11 hypotheses. As a result of the study, it was found that the Sinop kitchen culture and dishes are not well known, especially among the younger generation. In order to ensure the transmission of local foods from generation to generation, local governments and educational institutions should be involved in activities to raise awareness about local foods.
