| dc.description.abstract | Aşçılık, beceri ve planlı çalışmayı gerektiren bir meslek olup alana yönelik özen ve ilgi, son yıllarda artış göstermektedir. Mesleğe karşı artan ilgiyle orantılı olarak aşçılık eğitimi de önem kazanmıştır. İyi bir aşçılık eğitimi almış olan mutfak çalışanları çalıştıkları işletmelere değer katmaktadır. Aşçıların eğitimi hem kendi kariyerleri adına hem de çalıştıkları işletmelerin hizmet kalitesini arttırıp müşteri memnuniyeti sağlamaları adına önem arz etmektedir. Bu durum işletmenin performansını arttırırken karlılığını da doğrudan etkilemektedir. Bu çalışmanın amacı; aşçılık eğitimine yönelik düşüncelerin sektör başarısı ile ilişkilendirilmesidir. Çalışma, İstanbul’da faaliyet gösteren beş yıldızlı otel işletmelerinde çalışan 385 yönetici konumdaki aşçı üzerinde yürütülmüştür. Çalışmada otel işletmelerinde çalışan aşçıların aşçılık eğitiminin sektör başarısı ile ilişkisine yönelik düşüncelerinin demografik ve bireysel özelliklerine göre karşılaştırılmasında “t- testi” ve ANOVA analizlerinden yararlanılmıştır. Çalışma sonucunda katılımcıların aşçılık eğitiminin sektör başarısında etkisine yönelik düşüncelerinin olumlu yönde olduğu sonucuna ulaşılmıştır. Bunun yanında otel işletmelerinde çalışan aşçıların aşçılık eğitiminin sektör başarısı ile ilişkisine yönelik düşüncelerinde cinsiyete, yaşa, medeni duruma, gelir düzeyine, eğitim durumuna, sahip olunan mutfak eğitim derecelerine, mutfaktaki kadro durumuna, mutfaktaki görev durumuna, sahip olunan sertifikalara, mesleği yapma süresine ve şuan ki iş yerinde çalışma süresine göre anlamlı fark gözlenmemiştir. | dc.description.abstract | Cooking is a occupation that requires talent and continuous work and there has been recent increase in care and interest towards the field. In proportion with the increasing interest in the profession, cooking education gained importance. Cooks, who received a nice education, raises the quality of their workplace. The education of the cooks is important both for their own careers and for the companies in which they work to increase the quality of service and provide customer satisfaction. This situation directly affects profitability while increasing the performance of the business. The aim of this study is to correlate the thoughts related to cooking education with the success of the sector. The study was conducted on a cooks of 385 managers working in five-star hotel enterprises operating in Istanbul. In this study, t- test and ANOVA analyses were used to compare the attitudes of the cooks working in hotel enterprises to demographic and individual characteristics of their relationship with the success of cooking education in the sector. As a result of the study, it was concluded that the participants ' thoughts on the impact of cooking education on the success of the sector were positive. In addition, there was no significant difference in the opinions of cooks working in hotel enterprises regarding the success of the culinary education sector; gender, age, marital status, income level, education status, kitchen education degree, kitchen staff status, kitchen task status, certificates, occupation period and the working time at work.
